Beef with Bok Choy
Based loosely off of the recipe linked here.
Servings: 4
Ingredients:
- 1 1/2 lb. Flank Steak or whatever steak is on sale (we've used eye of round before and it worked), Trimmed Of Fat And Sliced Very Thin Against The Grain
- 1/2 cup Soy Sauce
- 3 Tbsp. Sherry or Cooking Sherry
- 2 Tbsp. Brown Sugar
- 2 Tbsp. Cornstarch
- 1 Tbsp. Minced Fresh Ginger
- 3 Bundles of Bok Choy
- 5 whole Scallions, Cut Into Haf-inch Pieces On The Diagonal
- Olive Oil
- Whatever rice you feel like tbh. Whatever you got in your kitchen. (Jasmine is recommended)
Instructions
- In a bowl, mix together soy sauce, sherry, brown sugar, cornstarch, and ginger. Pour the liquid over the sliced meat in a bowl and toss with hands. Set aside.
- Start your rice cooking
- After meat is marinated for a bit, heat oil on the skillet, cook the beef (while adding most of the scallions) over very hot heat, but don't burn it!
- Brown it and cook 'till it's cooked. Every pan is different and every burner is different. You may need to cook the meat in a couple batches depending on the size of your pan.
- Put the meat on a separate plate.
- Stick bok choy in the pan in whatever sauce remains 'till it's wilted a bit. Medium heat.
- Add the beef back in and stir.
- Serve with rice
